The Mediterranean Pantry with Guest Chef Nathan Brand
We hope you’ll join us in the upstairs teaching kitchen as we learn all about the fascinating, colorful, beautiful ingredients that make up the Mediterranean pantry!
Step away from the stove and into the European pantry! Today, we’ll explore how exceptional ingredients — vibrant extra virgin olive oil, interesting vinegars, briny tinned fish, and fragrant preserved lemons — can transform simple staples into an elegant, satisfying meal. You’ll learn how to taste olive oil like a sommelier, balance acid and fat like a chef, and build layered flavor using ingredients that live happily in your cupboard.
Together we’ll prepare a Mediterranean-inspired lunch of composed toasts, bright bean salads, and citrusy yogurt spreads — all with minimal cooking and maximum flavor. Every dish is designed to be easily recreated at home, making this class perfect for busy professionals, curious home cooks, and anyone who loves discovering beautiful pantry staples. Come hungry, leave inspired, and take home a new way to think about cooking.
After we spend a couple of hours in the kitchen, we’ll enjoy a seated lunch of what we’ve prepared. We will learn all about and pour some of our favorite Spring wines from our favorite regions along the Mediterranean!
A little bit about Nathan:
Nathan is a really neat, super talented and highly experienced chef and restaurateur who has called Johnson City, TN home since 2016. His culinary background was shaped in some exceptional kitchens, including The Willows Inn on Lummi Island, Luksus/Tørst in Brooklyn, Amass in Copenhagen, The Roosevelt and Dutch & Co. in Richmond, VA; and Five & Ten and The National in Athens, GA. He founded and recently sold Timber! in Johnson City, to focus on teaching cooking and crafting unique hospitality experiences across the Southeast.
